London's recipe for his Effortlessly Simple Grilled Chicken, is an easy choice. Topped with a mustard-honey glaze, made of honey, dijon mustard, and mustard seeds---which have been proven to stimulate circulation in the body (this could be helpful for your after dinner activity).
Effortlessly Simple Grilled Chicken with Seeded Honey-Mustard Glaze Serves 4, adapted from Healthy Chic Eats
4 skinless, boneless free range chicken breast halves
3 tablespoons plain low-fat yogurt
1 1/2 teaspoon honey mustard
1/2 teaspoon mustard seeds
1 teaspoon Dijon mustard
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Olive oil cooking spray
1. Preheat a grill or grill pan over medium high heat.
2. In a medium mixing bowl, whisk together olive oil, Dijon, salt and pepper. Place each breast in the bowl and evenly coat each side with mixture.
3. In a small mixing bowl, whisk together remaining ingredients.
4. Lightly spray grill with olive oil and grill each breast for 6 minutes per side, or until cooked through. Evenly coat each side with honey mustard mixture before flipping.
